Business background: John Kantzas has been in the food industry since 1971, perfecting his craft running diners, delis, fast-food, and bagel businesses. His last restaurant, The Rustic Grille in Monroe, gained a strong following of devoted customers that transitioned with him to his most recent endeavor, Eggs & Co.

The Newtown-based business, Eggs & Co. opened in December of 2015. It is family-owned and operated with Mr Kantzas and his wife Sandy cooking in the kitchen; while his son Marc and daughter Marie serve as waitstaff.

Having originally started out with just a half a dozen tables and counter seating, it became abundantly clear that as the business was growing it needed more room to accommodate those looking to dine-in and takeout.

Last November, the Kantzas family began discussing the idea of expanding the restaurant and got approval from the plaza's landlord, Dan Riccio, to purchase the space next door to them if the neighboring unit was able to move down one space. Fortunately, the adjacent business obliged and the Kantzas family was able to begin work on their addition in the first week of March.

After just over a month of remodeling, the new space was completed and opened to customers on April 13. Now the restaurant can seat more than 40 patrons in its dining area, more than doubling previous capacity.

The renovations also allowed for the former dining area to become a coffee lounge and takeout station where guests can come in with their laptops and enjoy a hot cup of coffee.

Business focus: Eggs & Co. serves up breakfast and lunch all day. The five-page menu not only has plenty of egg-based dishes - like "egg-straordinary omelets" and eggs benedicts - but it also has a wide selection of meals that accommodate many different dietary needs. There are gluten-free, low-carb, vegetarian, and even vegan options available.

The restaurant has introduced a number of new beverages, including cappuccino, espresso, and lattes, as well as new breakfast and lunch options such as waffles, hot oatmeal, crab cakes, and a vegan burger.

Eggs & Co. now sells bags of its branded coffee in a variety of flavors from dark roast to French vanilla to blueberry.

Important to know: Eggs & Co. has established a rapport with customers that feels reminiscent of a scene in Cheers - quirky, fun, and a place where everyone knows your name.

"When you first walk, in you're our customer; the second time you come in you're part of our family," Mr Kantzas said. "[Eggs & Co.] is run by family, and we want to make you feel like this is your home."

From the relaxed environment to the laid-back conversation that happens naturally with those nearby, Eggs & Co. has created a breakfast and lunch spot that all can enjoy.

"Newtown has a lot of great people who live here," Mr Kantzas said. "We want to thank the Newtown residents for making us succeed in the last two-and-a-half years for us to be able to expand. Without the loyal customer base in Newtown, we wouldn't have been able to do this."
