Dining Guide: Twins BBQ — A Backyard Barbecue For All Ages

Situated right off of US-7 at 401 Federal Road in Brookfield, Twins BBQ has made a name for itself by offering the classic backyard barbecue experience. Whether people stop by in person or get their food on-the-go, Twins BBQ serves up barbecue staples from briskets and ribs to chicken and pork for people of all ages.

Twins BBQ boasts an all-outdoor, farm-styled venue. Classic wooden benches line the gravel seating area, which also has a tap room truck, a stage for bands to perform on, and even a few small children’s play sets.

Despite his corporate background, Twins BBQ owner Mike Gallop is no stranger to serving people food. A self-professed barbecue aficionado, Gallop grew up in New York and was raised by parents who grew up in the south. He was brought up on home cooking, and eventually went on to host parties at his own New York home.

Gallop moved to Brookfield in 1997, but brought with him the backyard barbecue parties he threw every year, including his signature pig roasts. He said most people around Brookfield will remember when he used to serve pig roast at his house on the first of August.

“We were always barbecuing, and we’ve always believed this is an extension of my backyard, where you can just come relax, bring a chair, and listen to a band,” Gallop said. “So all those years, we were pig roasting, cooking for a lot of people, and we turned it into a truck.”

He started Twins BBQ in 2015 with a good friend who had helped him with barbecues in the past. They got their first food truck and traveled around serving people food.

“I was in the cellular business traveling around every week, and it really started from there, just a little food truck doing festivals and private parties,” Gallop explained.

His friend left after two years, but Gallop continued on. What really led to their Federal Road venue, he said, was the COVID-19 pandemic.

Gallop was still working in the corporate world when the pandemic hit and he said a local real estate agent called him and asked, “Hey [Gallop], can you bring out your food truck? We have no place to eat.”

“So I went to the town and my landlord and set something up with them. The Nuvance building next to us wasn’t open yet, so we would park here with the truck, and people would just sit in the lot around here and enjoy our food,” Gallop said.

Right where Twins BBQ would go on to open its prep kitchen and all-outdoor seating venue was once Larson’s Farm, a farm stand that sold produce and had a corn maze, according to Gallop.

Gallop reached out to the landlord of the area since the farm stand was no longer in use and, after getting approvals, converted the farm stand into Twins BBQ’s prep kitchen.

“So we built this all out,” Gallop explained. “It was just a regular farm stand and then it grew into us serving food … Wednesday through Sunday. And then we started selling beer, and then the bands came, and it just kind of grew. And every year, it just grows.”

Gallop said Twins BBQ just finished its 2025 band schedule, which ran from May until the end of October; it featured bands on Sundays, DJs on Friday nights, and even some acoustic performers on Saturday afternoons.

Twins BBQ also took over the nearby corn maze in 2024. After getting it professionally designed and cut, Gallop said they ran a lot of people through the maze last year, with visitors of all ages smiling and laughing through the twists and turns of its five acres.

“And it’s a good combination,” Gallop said. “People can enjoy the corn maze and then end the night with some food and drinks.”

Twins BBQ hosts various different events and fundraisers. Gallop said they’ve offered the space to local schools and organizations such as Brookville High School, Candlewood Lake Foundation, and No Sleep to Brookfield for their events.

For Gallop, another source of pride with Twins BBQ is that it is a place for all ages. He said the restaurant is not only kid friendly, but it is also dog friendly.

“My family owns three preschools, one in Monroe, another in Wilton, and we opened one in Bethel last year; that’s really where it comes from,” Gallop said. “My wife has owned the preschool in Monroe for around 24 years.”

Seeing Twins BBQ grow from a truck and picnic table in the dirt into a bustling place where people can share a good meal in good company is what has kept Gallop going for all these years.

His mission of bringing his backyard to the community has stayed the same, with Twins BBQ also offering mobile catering and a mobile taproom to bring its food straight to its customers.

“Backyard parties, graduations, birthdays, weddings — we do everything, you name it,” Gallop said.

Above all else, Gallop wants whoever eats their food to have a good time.

“I’m from corporate, and the old-school saying is to make sure our customers get a good experience. I want everyone to feel welcome wherever they are, and that they have someone good to start or end their day with,” Gallop said.

BBQ Breakfast: Added just this year, start your day the right way with a barbecue breakfast anytime from Wednesday through Sunday, 7:30-noon. Enjoy items such as the chunky but funky twins burrito, with scrambled eggs, bacon, and cheese topped with melted cheese and salsa, and a side of home fries. Also try out one of Twins BBQ’s delectable breakfast sandwiches, which include a side of home fries and coffee.

Twins BBQ Co Sampler: Sink your teeth into sampling some classic barbecue staples. Sample some quarter pound pork or chicken, or dig into a small mac and cheese or two slices of Texas toast.

Pick Your Own: Pick the perfect meal to keep you going through the day in just three steps. First, pick your protein, between brisket, pulled pork, or pulled chicken. Next, pick how you want it, either on a roll, over rice, plain in a bowl, or in soft flour or corn tacos. Finally, pick two toppings, from coleslaw, pickles, salsa, sour cream, pickled onions, pickled jalapenos, shredded cheese, and cheese sauce.

Housemade Specials: Sink your teeth into classics like the six-pack of smoked and fried wings or chicken and waffles. Alternatively, dig into a pulled pork grilled cheese or brisket quesadilla.

From The Grill: Enjoy backyard staples such as hamburgers, cheeseburgers, hot dogs, nachos with cheese, and more.

By The LB: Fill up your plate with pulled pork, pulled chicken, or brisket by the pound.

Sides: Round out your meal with small, medium, or large-sized sides such as potato salad, collard greens, mac and cheese with bacon, and more.

Dessert: Treat yourself to a chocolate chip cookie or some s’mores. Better yet, try out the fan-favorite mini donuts or donut sundae.
